Yep.  I do the same thing for my long running Xastir at home.

Of course, when we do Xastir2, the UI(s) will be separate and the part
with all the data will be a database of some sort.  So you could
detach/reattach the UI from the database with no loss of information.
Heck, if you stop the database task(s), you would only lose the data that
would have been fed to the database during the downtime, not previous
data.
