I've looked at the suggestions and I find the following:

Solar PC Panel - a little pricey at $249 but the touch screen feature 
is cool.  The SB110V CPU with the 7" Touch Screen System for $399 is a 
better deal.

XENARC 700Y 7" TFT LCD - at $319 it is out of my budget, but it is very 
nice looking.

iOpener or such - something like this is right up my alley.  Sub $100 
for display and cpu.
