GPSMan + gpsmanshp?  Yes, that works well.

You can also create shapefile maps with Xastir directly, from any
station track on the map, including your own.  Just hook a GPS into
Xastir and track yourself for a while, then save that data to a
Shapefile map and then use it later as a regular map.  Station
Info->Save Track.
