Any further progress?

I tried a bit during lunch-time. The default DNS servers in GNUroot don't work for me here so I added different ones to /etc/resolv.conf but still can't get "apt-get update" to work.

Have tried both GNUroot Debian and GNUroot, the latter with the Wheezy image.

I have a N7(2013) LTE with a Google Fi SIM card so should be able to duplicate what you've done so far. I'll be at a ham conference tomorrow and it would be cool to show off to a few people there if I could get it running by tonight.
